A new food option is rolling into Aggieville this summer as Crepe Du Jour, a French-inspired crepe truck, prepares to open behind Bluestem Bistro shortly after graduation.
The truck will operate mainly on weekends, offering morning through lunch hours and late-night service on Fridays and Saturdays. While the exact operating hours are not yet finalized, Crepe Du Jour’s goal is to serve both daytime brunch visitors and the college crowd.
A soft opening and several pop-ups are planned for the next few weeks, including one held on Wednesday afternoon from 2-4 p.m., where customers could sample one of six crepe options for free. The truck will post updates on future pop-ups as well as the official opening date on the Crepe Du Jour Instagram page.
Crepe Du Jour is the product of a partnership blending both local experience and international inspiration. Owner Kevin Pierce, who also operates Varsity Donuts and its late-night food truck, said the concept really took off after a trip to France last year, where he worked in the restaurant of one of his business partners. Pierce’s daughter — an avid crepe fan — pushed the idea forward even more.
“When she heard I was talking to my friend who’s from France about crepes, she got really excited,” Pierce said. “We just kind of kept talking about it, and, you know, some ideas grow and gain momentum, and sometimes ideas … fall apart. This one just kind of kept growing and getting people excited.”

That inspiration carried into the truck’s menu, which will feature sweet and savory crepes ranging from classics like ham and cheese or Nutella and strawberries to more unique options. The menu, still in the works, will include a core base of crepes with some seasonal selections as well. One unexpected hit from early testing was a pizza-style crepe, which college students picked as their favorite.
“Our first thought was, ‘Oh no, that doesn’t sound good at all,’” Pierce said. “And then we actually made one, and it was really, really good. It just goes to show you never really know what’s gonna work or capture people’s imaginations.”
Pierce’s experience at Varisty Donuts helped shape Crepe Du Jour’s design and strategy, with the new truck featuring an awning, benches and seasonal decorations to create a welcoming atmosphere.
“We don’t want it to just … feel like a trailer outside,” Pierce said. “We want it to feel very welcoming and also kind of unique. We definitely wanted people to walk around the corner in an alley and go, ‘Oh my gosh, what’s this?’”
As for the future, Pierce said the focus is on building something that people can connect with, and that feels like a natural part of Aggieville.
“If we can just have this be successful and well loved … sometimes things just take off,” he said. “We hope it just feels like part of the community. I hope people say, ‘I can’t imagine Aggieville without a crepe shop.’”
